The dining hall had three options for every meal I ate with her. For dinner one evening I had the option of Russian cabbage soup, salad, or fruit salad as an appetizer. I thought those weren't so bad as choices. The salad was not organic dark leafy greens though. It was iceberg lettuce and a cherry tomato. The flavors were good though. I was surprised. The soup just needed some salt. I suppose some folks have bland diets or restricted eating protocols depending on their medical conditions and advanced ages. The dressings were full of chemicals and preservatives though.
The main courses were flavorless, being the kindest thing I could publicly say. I don't know what toxic, industrial seed oils or thickening gravy agents they used on the meats and potatoes, but the food resembled fake food from a magazine photo from the 1970's. The cost of living there begins at about $3500.00 per person, plus medical expenses and fun money each month, so I know the level of food quality could be higher.
I am appalled at what our senior citizens are being fed in this country. No wonder their brain function is suffering! Most seniors there don't want the meats and fishes because it isn't appealing. Then they suffer from vitamin B12 deficiency which comes from animal protein. That causes memory loss and depression, as well as a host of other mental function deficits. It also affects hormones, which sets off other systemic issues. It is a vicious cycle. We need B12 from outside sources to live.
It really is not difficult or expensive to switch up to better oils like coconut oil, butter, or grape seed oil. It is cost effective and better for absorption of minerals and vitamins. It helps with the medium and long chain fatty acids in the food we eat alongside the oils. If we add olive oil, fresh avocado, grass fed butter, etc. we will see the seniors become more agile in their minds and bodies within 8 weeks. I have seen excellent cognitive and physical improvement results with the folks I teach on a weekly basis. I felt sad and a little bit bitter that I lived so far from mama.
I will make every effort to intercede on her behalf with her senior team from afar. I will continue to dedicate my work and passion to helping others through real food healing. We must take better care of our elders. They hold so much information and power and wisdom. We do not have the right to discard them and throw away the key. They hold the key.
