When we go to the grocery store and buy apples or lettuce, does the sign say, "raw apples, raw lettuce?" No, it doesn't. It just is what it is. So, when we buy raw milk or cheese, why does it say raw? We were fooled by the FDA years ago to believe that cooked milk and dairy is normal. Lactose intolerance is caused by the pasteurization of dairy. The molecules change and are further changed by homogenization. If we use raw dairy it contains lactase, not lactose. If humans were lactase intolerant, we couldn't nurse or drink our mother's milk. Mothers lactate. So, if you are lactose intolerant, I encourage you to experiment with real raw dairy products. It is healthful, contains healthy fat and is non-mucous forming!
